Winter is upon us. Cue warm blankets, cuddling in front of the fireplace and a welcomed glass of red wine (or two). And although these are a few of the reasons I love winter, the thought of leaving home in the mornings when it’s dark, arriving home at night again, when it’s dark, and then cooking a meal doesn’t really appeal to me. So it’s with sheer delight that I share my new-found joy of fast, one-pot cooking with you… The Pressure Cooker! I remember my mom using her old stove-top pressure cooker many times during my childhood years, she made the most amazing stews in that old thing. I can’t say I’m not grateful that technology has simplified the process for us new-age moms though. The electric pressure cooker is many a busy mom’s saving grace.
So I’ve scoured the web for my favourite pressure cooker recipes, which I keep close at hand, especially during the chilly winter months and have decided to share these with you. At home, I use the AEG Electric Pressure Cooker, but most of the recipes I’m sharing with you today can be used with a stove-top pressure cooker as well.

Beef stroganoff has been marked as one of the most popular comfort foods during winter. This Russian dish – consisting of beef and mushrooms and in a delightful sour cream sauce – is also a staple in many diets around the world. Using your pressure cooker you can cook this meal in under one hour.
This delicious, tender braised lamb shanks in a red wine and vegetable gravy is a winner with my family. It’s very yummy served with mashed potato and a side dish of veggies.
What a superb bowl of Vietnamese chicken noodle soup with rich, aromatic broth and fall-off-the-bone tender chicken… and it’s all made in under half an hour. Definitely one of my favourites.
Tender chicken thighs in a rich, creamy, spicy, buttery tomato sauce. A favorite dish at Indian restaurants that is easy to make at home. Delicious served with home-made Naan Bread.

The flavourful butternut soup is my all time favourite pressure cooker recipe. I normally serve it with crispy French Loaf. Yum!

Let’s celebrate this succulent source of protein, iron, healthy fats, vitamins and minerals, here’s a pressure cooker recipe for lamb curry with an Indian-Asian twist of spicy goodness to it. It’s very easy to prepare and cook and is great as a filling dinner for the whole family!
