Winter is upon us. Cue warm blankets, cuddling in front of the fireplace and a welcomed glass of red wine (or two). And although these are a few of the reasons I love winter, the thought of leaving home in the mornings when it’s dark, arriving home at night again, when it’s dark, and then cooking a meal doesn’t really appeal to me. So it’s with sheer delight that I share my new-found joy of fast, one-pot cooking with you… The Pressure Cooker! I remember my mom using her old stove-top pressure cooker many times during my childhood years, she made the most amazing stews in that old thing. I can’t say I’m not grateful that technology has simplified the process for us new-age moms though. The electric pressure cooker is many a busy mom’s saving grace.

So I’ve scoured the web for my favourite pressure cooker recipes, which I keep close at hand, especially during the chilly winter months and have decided to share these with you. At home, I use the AEG Electric Pressure Cooker, but most of the recipes I’m sharing with you today can be used with a stove-top pressure cooker as well.

Here are my top pressure cooker recipes of all time:

1.  Pressure Cooker Beef Stroganoff

Beef stroganoff has been marked as one of the most popular comfort foods during winter. This Russian dish – consisting of beef and mushrooms and in a delightful sour cream sauce – is also a staple in many diets around the world. Using your pressure cooker you can cook this meal in under one hour.

2.  Pressure Cooker Braised Lamb Shanks

This delicious, tender braised lamb shanks in a red wine and vegetable gravy is a winner with my family. It’s very yummy served with mashed potato and a side dish of veggies.

3.  Pressure Cooker Vietnamese Chicken Soup

What a superb bowl of Vietnamese chicken noodle soup with rich, aromatic broth and fall-off-the-bone tender chicken… and it’s all made in under half an hour. Definitely one of my favourites.

4.  Pressure Cooker Indian Butter Chicken

Tender chicken thighs in a rich, creamy, spicy, buttery tomato sauce. A favorite dish at Indian restaurants that is easy to make at home. Delicious served with home-made Naan Bread.

5.  Pressure Cooker Hearty Beef Stew

Nothing provides more comfort on a cold night than a bowl of warm, tummy-satisfying beef stew. This classic recipe of beef stew with potatoes, carrots and herbs makes a hearty, delicious meal that is perfect to serve for the entire family.

6.  Pressure Cooker Coq Au Vin

A pressure cooker twist on a classic French chicken stew made with chicken thighs, onions, carrots, mushrooms, and topped with bacon. You can make this slow-cooked favorite even on a weeknight in a pressure cooker.

The flavourful butternut soup is my all time favourite pressure cooker recipe. I normally serve it with crispy French Loaf. Yum!

8.  Pressure Cooker Lamb Curry

Who doesn’t love a good cut of Karoo lamb? Let’s celebrate this succulent source of protein, iron, healthy fats, vitamins and minerals, here’s a pressure cooker recipe for lamb curry with an Indian-Asian twist of spicy goodness to it. It’s very easy to prepare and cook and is great as a filling dinner for the whole family!
